แนะวิธีทำ ปาเต้เป็ด อาหารฝรั่งอย่างง่าย ทำได้ไม่เลอะ

พ่อผมเข้าเป็นเด็กประจำโรงเรียนเซนต์คาเบรียลตั้งแต่ชั้นประถมหนึ่ง กับนักบวชที่ถวายตัวตลอดชีวิตมาสอนหนังสือในเมืองไทย เราเรียกท่านว่า ภราดา Brother แต่เด็กๆ เรียก บราเด้อ และพ่อคุ้นกับอาหารฝรั่งที่กุ๊กชาวไหหนำประกอบเลี้ยงบราเด้อมาแต่บัดนั้น

เมื่อมีครอบครัว มีผมและน้องๆ นอกจากอาหารไทยที่แม่ทำแล้ว วันอาทิตย์ พ่อมักจะขอมื้อเช้าเป็นอาหารฝรั่งบ้าง คือ ขนมปัง ไข่ดาว เบคอน แฮม ไส้กรอก เหยาะซอสเปรี้ยวตรากระต่าย ตบท้ายด้วยขนมปังทาเนยและแยมรสสตรอเบอรี่

ถ้าไม่ทาแยม จะมีตับบด ทำจากตับไก่

ทั้ง เบคอน แฮม ไส้กรอก และตับบด ทำจากร้าน “บางกอกซอสเสจ” บนถนนมเหสักข์ รสชาติขนานแท้ เพราะเจ้าของคนทำเป็นเยอรมัน และทางร้านทำส่งโรงแรมหรูในกรุงเทพฯ มิให้แขกบ้านแขกเมืองหรือชาวตะวันตกได้อดอยากปากเปรี้ยวแต่ประการใด

จำเนียรกาลผ่านไป หาตับบดไก่ไม่ค่อยได้ มีแต่ตับบดหมู ผมจึงต้องค้นหาตำราตับบดไก่มาทำกินเอง และด้วยเหตุผลเดียวกับย่อหน้าที่แล้ว มีร้านค้ามาขอให้ผมทำส่ง จึงกับลูกชายทำส่งเขา ให้เขามีขนมปังปิ้งทาเนย-ตับไก่บด บริการลูกค้าประจำที่ถามหามิได้ขาด ทั้งเป็นหน้าเป็นตาของร้านอีกด้วย

เมื่อทำตับไก่บดจนเบื่อ คิดพลิกแพลงทำตับเป็ดๆ ก็หายากเสียจริง ภัตตาคารเอาไปหมด ต้องอาศัยตับไก่ตลาดสด มีทั้งที่แยกตับล้วน ส่วนใหญ่จะขายเป็นพวงกับกึ๋นและหัวใจ

เนื้อเป็ดสดตามห้างใหญ่ มีขายตั้งแต่แช่แข็งทั้งตัว หรือชำแหละบรรจุถาดห่อพลาสติกใส เป็นอกล้วน ตะโพกพร้อมน่อง ตะโพกเลาะกระดูก แล้วยังมีเนื้อสะโพกหั่นแกงหรือเนื้อเป็ดชิ้น

ได้ตับไก่และเนื้อเป็ดชิ้น เราก็ทำปาเต้เป็ดได้แล้ว จัดมาปริมาณเท่ากันรวมให้ได้ 1 กิโล ส่วนประกอบอย่างอื่นมี เบคอน 2 ขีด (เบคอนริ้วสวยโลละ 500 ถ้าเศษเบคอน โลละ 200) หอมหัวใหญ่ 2 ขีด โยเกิร์ตจืดถ้วย 150 กรัม ไข่ไก่ 1 ฟอง เหล้าเชอร์รี่นครชัยศรีหรือบรั่นดี 2 ฝา เครื่องเทศโปรวองศ์ 1 ช้อนโต๊ะ ใบกระวานแห้ง 4 ใบ และพริกไทย 1 ช้อนชา เกลือไม่ต้อง เพราะเค็มเบคอนกำลังดีอยู่แล้ว

ก่อนอื่นใด เคล้าตับไก่กับเกลือทิ้งไว้ 15 นาที เพื่อดึงน้ำและคาวจากตับ ใช้มีดบางเลาะขูดไขมันที่พอกตับและพังผืดออกให้เกลี้ยง ล้างน้ำสงให้แห้ง

วีธีทำอย่างไม่เลอะ เริ่มจากซอยหอมใหญ่ รวนกับเนยสดเค็ม 50 กรัม ในกระทะไฟกลาง จนหัวหอมสุกใส เติมเบคอนซอย ผัดให้มันเบคอนใส แล้วจึงใส่ส่วนประกอบทั้งหมดสองย่อหน้าก่อน เร่งไฟคลุกเคล้าให้สุกทั่วกัน 10 นาที เอาใบกระวานออก แบ่งส่วนผสมทะยอยเข้าเครื่องปั่นจนหมด แล้วตักใส่ภาชนะ เป็นชามกระเบื้องก้นลึกหรือกระทงฟอยล์

จากนั้นทำให้สุกอีกครั้ง โดยนึ่งเหนือน้ำเดือดพล่าน 15 นาที หรือวางภาชนะบนถาดหล่อน้ำเข้าเตาอบไฟแรงจัด 15 นาที ทิ้งไว้ให้เย็น เก็บเข้าตู้เย็นโดยไม่ปิดฝา เนื้อปาเต้จะเซ็ตตัว

วิธีเสิร์ฟ ปิ้งขนมปังทาเนยสด แล้วปาดหน้าด้วยปาเต้อย่างหนา ถ้ามีแตงดอง มะเขือเปรี้ยวแนมจะอร่อยมากจ้ะ

ถ้าจะทำตับไก่บด ก็ไม่ต้องใส่เนื้อเป็ดซีจ๊ะ

 

Duck Pâté

My dad enrolled as a boarding student at St. Gabriel’s College from Elementary 1, run by the Brothers of Christian Instruction; and ever since was familiar with western food prepared for the brothers by Hainan cooks.

With his family, me et al, besides Thai dishes made by mom; on Sunday dad would request western breakfast: bread, fried egg, bacon, ham, sausage daubed with Worcestershire Sauce; ending with bread and butter and strawberry jam.

Alternative to jam was Liver Pâté made from chicken liver.

Bacon, ham, sausage and chicken liver pâté were, at that time, from “Bangkok Sausage”; in authenticity since the owner/chef was German. The Charcuterie also supplied these to plush hotels in Bangkok so guests or western immigrants were not deprived of such regimen.

Time passed, chicken liver pâté has become so scarce but pork I had to get a recipe to make my own. Coincidentally a food shop asked for it; I and my son abided, supplying them so they had toast & liver pâté to meet customer constant demand; and establish them a status.

Done with chicken liver pâté diverting to duck’s, the latter is bought up by restaurant. I’m back to chicken liver from fresh market, sold by itself or, mostly, with gizzard and heart.

Duck is available in supermarket – frozen-whole or cutups and packed in cellophane-wrapped tray of breast, whole leg, boneless thigh and “Curry morsels”.

With chicken liver and curry morsel we make Duck Pâté; equally of each to make 1 kilo. Other ingredients are: bacon 200 g; onion 200 g; yoghurt 150 g; egg 1; sherry or brandy 2 tbs; Herbs de Province 4 tbs; bay leaf 4; black pepper 1 tsp. Salt is not required because bacon gives appropriate saltiness.

First of all, marinate liver in salt for 15 minutes to draw out dampness and odour. Use paring knife to rid all clinging fats and tendon tissue; rinse and let dry.

Preparation: chop onion and sauté in 50 g salted butter in skillet over medium heat until it turns transparent; add chopped bacon until the fat becomes transparent; add the rest, turn up heat and toss for evenly doneness; discard bay leaves; blend in portions until smooth; ladle into terrines or aluminum foil cups.

Final-cook the pâté either by 15-min steaming over boiling water; or 15-min bain-marie in a high-heat oven. Let it cool and keep in a fridge without lid so the mixture sets.

Serve: with toasted, butter and smother with pâté; gherkin and cherry tomato will excel it.

To make chicken liver pâté, just omit duck.
